LOADED GUACAMOLE

I’m somewhat obsessed with avocados which is why when I visited an obscure Latin American Restaurant last year, La Macarena Pupuseria, and the waiter said they served the most amazing Guacamole I’ve ever had, I took the bait with a hook, line, and a sinker. I wanted to know the secret behind the guac that was supposedly amazing. Well, let me say it was not just the most delicious Guacamole I’ve ever tasted but also one of the most distinctive. My only concern is how did it take an entire year before I attempted to make what ended up being the best-loaded Guacamole that I’ve ever tasted in my whole life at home?!

WHAT’S IN LOADED GUACAMOLE?

In addition to the standard ingredients in Guacamole, such as lime, avocado, and salt, there’s lots more happening inside this dish. Guacamole and other flavors like delicious sweet pineapples, spicy-tangy Sriracha, and a surprising surprise: hardboiled eggs! The sweet pineapple and the spicy Sriracha provided the perfect contrast to the smooth avocado as well as the egg’s yolk. Egg whites are pretty and tasteless. Therefore, they only add texture, color, and stomach-filling force.

INGREDIENTS

3 ripe avocados ($2.64)

1 8oz. pineapple chunks rinsed ($1.09)

Small onions red ($0.20)

2 Tbsp fresh cilantro chopped ($0.09)

1 Tbsp sriracha hot sauce ($0.09)

1/2 tsp salt ($0.02)

Three huge egg hardboiled($0.81)

INSTRUCTIONS

Slice the avocados into pieces and then place them in the bowl. Then, drain the pineapple chunks from canned and chop them into smaller chunks. Finely chop the onion red. Chop the cilantro

Add the onion, pineapple, cilantro, and Sriracha into the bowl with the avocado. Mash all of it together. Add salt as desired, approximately 1/2 teaspoon.

Chop the hardboiled eggs, then stir them into the mixture of avocado. Check the dip for taste and alter the salt or hot sauce to taste if necessary. Serve immediately or chill until you are ready to serve.
