CREAMY CUCUMBER SALAD
No salad says summer more than a simple cucumber and cream salad. This salad is light, fresh and only takes a few minutes to prepare. It’s the ideal side dish for your summer meals.
What’s in CREAMY CUCUMBER SALAD?
This classic summer salad includes cucumbers, onions, and a creamy dressing. It can vary depending on the recipe but is usually a yogurt or sour cream base, with some acid (lemon juice, vinegar, or sugar) and Dill. This dressing is simple, delicious, and fresh!
Can I use fresh Dill?
The original recipe calls for fresh Dill. However, fresh Dill is sometimes hard to come by or expensive. I, therefore, made this version with dried Dill. If you can find fresh Dill, using it’s a good idea. Instead of using dried Dill, I would use 2 Tbsp—of chopped fresh Dill.
Peel or not to peel the cactus?
You can peel cucumbers if you like. Peel them if you want. I like the contrast in color that the peel creates. However, some people have digestive problems with cucumber peels. If the seeds bother you, you can scrape them out.
How are the LEFTOVERS being used?
The salad will become watery after a few days in the refrigerator because of the salty dressing. This salad is easy to reduce in size, or if you plan to keep the leftovers, you can use salt to remove the excess moisture. Salting cucumbers makes them softer, and that’s why I wouldn’t say I like it.
Place cucumbers in a colander with 1/2 teaspoon of salt to pre-salt them. Let the cucumbers drain in a colander for approximately half an hour. Then, pat them dry with a towel. The cucumbers contain salt, so you can skip adding it to the sour-cream dressing. Instead, add salt as desired after assembling the salad.

Ingredients
1/2 cup sour cream ($0.55)
2 tbsp of lemon juice ($0.08)
Half a teaspoon of dried Dill (0.05 cents)
1 tsp sugar ($0.02)
1/2 tsp salt ($0.02)
One large cucumber (USD 1.49)
14 red onion (0.10)
Instructions
Combine the sour cream, lemon juice, and sugar in a large bowl with the Dill and salt. Set aside the dressing.
If desired, peel the cucumbers. Slice the red onions and cucumbers thinly.
Mix the red onion and cucumber in a large mixing bowl.
After 5-10 minutes, stir the salad again and serve.
