I knew immediately that I would make a cheesesteak using a chuck roast, cooked to perfection. I decided to make it "Philly-style" by adding a lot of caramelized bell peppers and onions. The dish was still lacking something, so I made a homemade garlic aioli to slather on top. Since I discovered Greek yogurt, I have become a little obsessed. It's so versatile; I can use it in all kinds of ways, from this sandwich with chicken salad to my favorite sandwich with chicken pesto.
